Lovely fresh Italian style salad

Why we love this

We love recipes that feel relaxed but thoughtful: good seafood, a simple method, and enough flavour to make the meal feel like a small occasion.

What you'll need

Gather everything first, then the cooking feels calmer.

  • 1 can Butter Beans
  • 4 Spring Onions
  • Cherry Tomatoes
  • Handful of Basil Leaves
  • Mozzarella Cheese
  • Approx 2 tbsp Olive Oil & 1 tbsp Balsamic Vinegar
  • salt & pepper to taste
  • Chop the cherry tomatoes in half
  • Rinse and drain butter beans
  • Put the tomatoes and beans into a bowl
  • Mix the oil and vinegar together and stir a little through the tomatoes and beans
  • Transfer to a serving dish and add the basil leaves and mozzarella cheese
  • Add salt & pepper to taste

Cook along

Take it step by step; seafood rewards a calm hand.

  1. 1

Chop the cherry tomatoes in half

  2. 2

    Rinse and drain butter beans

  3. 3

Put the tomatoes and beans into a bowl

  4. 4

Mix the oil and vinegar together and stir a little through the tomatoes and beans

  5. 5

Transfer to a serving dish and add the basil leaves and mozzarella cheese

  6. 6

Add salt & pepper to taste

Make it Different

Try adding a few black olives.

Missing Ingredients?

You can use feta instead of mozzarella or finely sliced red onion instead of spring onions.

Serve it with

Keep the sides simple: something fresh, something warm, and a little squeeze of lemon usually does the trick.
